Tammi Recipe of Muffins: 2 large baked sweet potatoes

3 eggs

3/4 cups coconut oil

1 cup raw honey

1/2 cup cocoa

1/2 cup whole roasted almonds

1/2 cup whole cashews

1/4 cup rice flour

2 tsp baking soda

2 tablespoons vanilla

1 tsp sea salt


(I used the vitamix to mix this recipe but a food processor should work nicely too.)

I preheated my oven to 350 on the convection oven setting. I put the ingredients in the vitamix mixing after every ingredient addition. I baked them for about 10 minutes- rotating trays after the first five mins. They don't puff up a ton so you can fill the muffin cups almost all the way up. I found that they are super moist and slightly fudgey if they don't cook until they are too dried out. I just tested one straight out of the oven until it was the texture I wanted it to be so I'm unsure if they cooked the full 10 minutes or not. Now that I know that this is a bomb ass recipe, I will make them again being careful to write down all of the steps in more detail. But this will get you started.
